意識形態

「意識形態（Ideology）可以被理解為一種具有理解性的想像、一種觀看事物的方法，存在於共識和一些哲學趨勢中，或者是指由社會中的統治階級對所有社會成員提出的一組觀念。」– 維基百科。

40歲的意大利廚師Roberto，他在意大利西西里島某餐館當廚師。他20歲那年讀過《馬可波羅遊記》後，十分仰慕中國文化。他在工餘時間學習普通話和中國漢字。38歲那年，Roberto娶了在西西里島教他普通話的上海藉女教師做太太，太太名字叫「王欣晴」。

婚後的Roberto，為了一嘗心願，決定和太太離開意大利，移居東方。太太不想回上海，Roberto決定去香港，希望在香港生活至少五年，之後才回歐洲。

Roberto和太太「欣晴」由意大利飛到香港，如一般外籍人士，Roberto面對的問題：是選擇定居於「愉景灣」、「西貢」還是「坪州」呢？最後，Roberto有一鄉里已經居住在西貢多年，大讚西貢環境悠閒舒適，有山有海。Roberto決定居於西貢，多一個朋友，多一個照應。

Roberto租了村屋的頂層，夫婦兩人很喜歡這裡的生活。Roberto的普通話能應付日常生活。一個「熱愛東方」信徒，終於可以來到東方生活。太太在家中接一些言語翻譯的freelance工作。丈夫打算做回老本行：餐館。

Roberto在網上見到西貢某間泰國餐館的老板「有意頂讓」，Roberto跟那泰國老板洽談，Roberto願意押上他的畢生積蓄，頂手接管那餐館來經營。兩人一拍即合，Roberto立即榮升老板，在西貢創業。

Roberto想開辦他最得心應手的意大利菜館，但問題來了：就是他的資金有限，唔夠錢將餐館重新裝修，客人在一間泰式裝修的餐館內吃意大利菜，氣氛未免有點怪。

但考慮到資金不足的問題，削足就履的方法，就是放棄做意大利菜、繼續做泰國菜。保留現有裝修之餘，又可以聘用現有的廚師、侍應和收銀員，他們已有熟練的工作經驗，唔使再培訓，一家平宜兩家著。

Roberto把泰國餐館原有名字：「清邁泰國菜館」改名做「晴邁泰國菜館」，用上了太太「欣晴」的「晴」字，作為紀念。

身為多年大廚師的Roberto，怎可能不過問餐館的菜式用料、煮法和賣相呢？結果Roberto堅持加入意大利調味料去烹飪泰菜：橄欖油、白醋、芝士、忌簾、白酒、牛油、迷迭香、香草等等。泰藉廚師「猜差」立即強烈抗議：「唔用魚露、紅辣椒、大蒜、咖哩粉、胡椒粉、米酒、青檸檬、椰漿、碎花生，點煮泰菜呀？老板！」

一個意大利人、一個泰國人，兩人對煮餸都抱有不同的「意識形態」，口同鼻抝、雞同鴨講，最後當然是勞方向資方屈服，泰藉廚師讓步，用意大利香料泡製這種改良口味的獨門泰菜。

唔使講啦，食客食完之後，在Openrice留言狠批：「清邁泰國菜館易手『晴邁』後，難以入口」、「請都唔會再來」、「西貢唯一餐館 門可羅雀」、「波波叮飯都好味過佢」。Roberto生意一落千丈，愁眉苦臉。

太太見到丈夫咁煩惱，終於忍不住要出手。太太做文字工作，認識不少香港的飲食雜誌記者。欣晴找來四本飲食雜誌，「拍膊頭」替Roberto的餐館做專訪介紹。

欣晴針對了問題的根源：食客一心諗著到「晴邁」吃正宗泰國菜，當然會失望而回。如果旗幟鮮明話係「泰國crossover意大利的fusion菜」，吸引對胃口的食客群，食客的期望不單沒有落差，這新菜式又有gimmick。欣晴仲勸Roberto將餐館改名，叫做：

「意式營泰 it(Thai)liano」。

在雜誌訪問的相片中，一個意大利佬娓娓道來他的「意式營泰」理念：用意大利方式經營泰國菜館，成為一個大賣點。「酸辣味海鮮意大利飯」、「沙爹炒蟹意大利薄餅」、「白咖哩串燒寬條麵」、「生牛肉西柚天使麵」、「椰汁黑糯米焗蘋果酥」菜式目不暇給。

雜誌出街後，吸引一班食客。顧客食完之後，在Openrice留言激讚：「意式營泰，大膽創新」、「等位等幾耐都值得等」、「食完一定要返嚟再試」、「明年必入選米芝蓮之fusion菜」。Roberto生意蒸蒸日上，笑逐顏開。

不同國藉的廚師，有不同的「意識形態」，在工作上產生矛盾衝突。幸而Roberto背後的女人「欣晴」，懂打「人情牌」又心水清，力挽狂瀾。用「意式營泰」解決「意識形態」的問題，Roberto才可以在東方創出一番事業，一展所長。
