The culture behind a category of regional cuisine brings more magic and attraction, and as eater, I am very glad to be educated. Take Chinese cuisine as example, we have so many categories based in different regions, from Northeast China (Dongbei cuisine), Beijing's to south parts like Shanghai, Sichuan, Teochow (Chaozhou), Cantonese... can say every individual city/town has its unique flavor and the way of cooking, which brings out a large diverse of local culture and history. And that's the big big part which makes me proud of so much.
The new opening Putien, has a focus on Teochow cuisine brought back by the founder originated in Fujian province of China, but developed his successful restaurant business in Singapore. So, it's quite interesting that Putien has a line of very traditional and authentic Teochow dishes, but also included some Singaporean's style and Southeast Asian elements. Among all, the very-tradition of Pork Dumpling Skin features Putien brand and is exactly what I appreciate a lot in terms of the insistence of good and traditional food behind the hands of chef.
It's a small size of dumpling, with the same looking but absolutely difference if you have tried a lot of different dumplings in China. It's not like the North part, to be big and rolled with dough/flour skin, it's 100% pork from the fillings to the skin. The processing of pork dumpling skin is a very complicated, time-consuming job and which is vanishing largely nowadays.
The chef starts to make this unique pork dumpling skin since 16-year-old. Good quality pork is selected from the early morning market by chef, and normally the quality meat needs to be collected from 10 pigs. Back to the kitchen, it takes 3 hours non-stop beating by the Chef, to bring out the elasticity from the pork as well as making it smashed, to make the paper-thin dumpling skin, the Chef need to flatten the smashed meat into thin layers by mixing with sweet potato powder. From the pork selection till the last step, it almost takes the whole morning, and the super-thin but smoothy-taste dumpling skin with a size of 21 square meters, is really worthy for that!
Besides the famous traditional dish, the new opening brand store in Hollywood Plaza at Dimond Hill, offers special afternoon tea set priced at $68 per set, which is really pricingly attractive. It includes 6 traditional Teochow dishes/snacks with a really beautiful wooden case.
The small bites covers savories and sweets, appetizers and main courses (rice noodle). The presentation actually is quite a big surprise, and the dishes are mixing with traditional Teochow, Shanghainese, Singaporean and even a little Cantonese cuisines. For example, the sour and sweet marinated seaweed is very impressively tasty and refreshing.
The traditional rice noodle has a perfect chemistry with Putien's homemade spicy sauce, a slim taste of sourness, spicy hot and sweetness in a typical Singaporean way, to input an extra outstanding flavor to the rice noodle which is also companied with a lot different seafood such as clams and shrimps.
The whole afternoon tea is not very oily or greasy; it seems just a little bite per dish, but quite easy to make you full to be honest.
