媽媽的朋友吃過之前我做的豆浆全麥亜蔴籽包,對她的潮熱和流汗的問題有明顯改善,不过她愛吃輭輭的小甜包,今天改用豆浆湯種和加了蜜糖和黑糖。希望她喜欢。看過很多報導関於牛奶類製品裏有激素及苛爾蒙。對更年期婦女更不好,所以也跟上次一様用菜油。
My mothers' friend had my other flaxseed and soy milk bun and had good improvements on her menopause symtoms such as hot flushes and sweating. But she likes soft sweet rolls so this time I used soy milk hot dough and add honey and brown sugar. There are also lots of article in regards to hormones and additives in milk products that are affecting ladies in menopause. So I also used vegetable oil this time.
材料:
湯種-
100g豆浆
20g 高筋粉
面団-
230g 高筋粉
20g 蛋
20g 水
2湯匙 蜜糖
10g 黑糖
6g 即溶酵母
15g 亜蔴籽
1 湯匙 菜油
装饰:
少許 蛋醤
Ingredients :
Hot dough -
100g unsweetened soy milk
20g bread flour
Main dough-
230g bread flour
20g egg
20g water
2tbsp honey
10g brown sugar
6g instant dry yeast
15g flaxseed (linseed)
1 tbsp vegetable oil
做法:
先把湯種材料放炉上小火煮至稠。蓋上保鲜膜,放一旁待凉。
Method:
First put all hot dough ingredients onto the small saucepan and cook with low heat until thickened. Remove from heat immediately and cover with cling wrap. Put aside to cool.
把湯種和主面団除油之外全部搓匀,面団成形後才放油,搓至起筋或薄膜。蓋上保鲜膜靜置1小时或至發酵至2倍大。
Mixed all ingredients for the main dough and hot dough except oil. Add oil after a rough dough is form. Knead until a thin film is form and covered with cling wrap and put aside to rise until the dough doubled.
面団取出,置灑了乾粉的工作枱上,用手輕輕按壓排氣。分割成4份。用剪刀在面上做十字形,蓋上布放一旁作第二次發酵至2倍大。
Take the risen dough out onto a lightly floured surface. Use your hands to lightly squeeze the air out. Cut the cough into 4 equal parts and roll into a ball. Cut a small cross on the top of bun with a scissors. Cover with a clean tea towel and let it rise for a 2nd time until dough risen double it's size.
預熱焗炉160c(fan forced),掃上蛋浆,焗15-20分钟即成。
Preheat oven to 160c ( fan forced) brush egg wash onto buns and bake for 15-20 minutes.
