真正黑白配-白芝麻黑糖湯種包white sesame paste bread with brown sugarwith hot dough method

本來是打算做咸豬仔包,不过看見雪柜裏有芝麻酱,不如就做黑白配啦!

I originally wanted to make simple dinner buns but saw the tahini sesame paste in the fridge.  Then I decided to make them in 2 different colour and flavours.

材料:

湯種-
40g高筋粉
200g水

Ingredients :
Hot dough -
40g bread flour
200g water

白包-
120g湯種
230g高筋粉
4g即發酵母
50g水
4g鹽
10g砂糖
2湯匙tahini芝麻酱
1湯匙橄榄油
1湯匙白芝麻

White bread dough
120g hot dough
230g bread flour
4g instant dry yeast
50g water
4g salt
10g sugar
2tbsp tahini sesame paste
1tbsp olive oil
1 tbsp white sesame seed

黑包
120g湯種
230g高筋粉
4g即發酵母
50g水
4g鹽
15g黑糖
2湯匙tahini芝麻酱
1湯匙橄榄油
1湯匙黑芝麻

Brown bread
120g hot dough
230g bread flour
4g instant dry yeast
50g water
4g salt
10g brown sugar 
2tbsp tahini sesame paste
1tbsp olive oil
1 tbsp black sesame seed

装饰:蛋液少許
Garnish : egg wash a little

做法:
先把湯種材料放炉上慢火煮至稠。分2份用保鲜膜包好待用。

白包和黑包分别放入湯種,搓勻至起薄膜,放一旁發酵至2倍大。用保鲜膜蓋上以免面団吹乾。

用9寸圓模(最好用spring form因为易除模)用不沾紙圍邊和底。

Method
Cook hot dough on stove in low heat until thicken and divided into 2 portions.  Cover the dough with cling film with film touching the dough to prevent dough from drying out. Put aside to cool.

Knead both white dough and brown dough separately until a thin film is form and set aside to rise until it doubled in size. Cover while it's rising to prevent dough dry out.

Use a 9" round pan (preferably spring form to allow easy release) and lined bottom and side with nonstick baking paper.

把黑白面団分别分割5份和6份。較多的一份放模中心。黑白面団面先掃上水然后分别沾上黑白芝麻。

Divided white and brown dough in 5 and 6 portions respectively.  The larger portion one is the centre one. Put the buns in one by one working from the centre. Brush each dough with water and dip into the sesame.  (White dough with white sesame and brown dough with black sesame).

從中心向外圍不同顔色,最後多出來的一份分割成四份放於最外围空间。
The last one dough is cut into 4 equal pieces to fill the gaps around the edge.

放一旁蓋上布作2度發酵至2倍大。塗上蛋液。

Cover it with tea towel and let it rise to double its size.


放入預熱180c焗炉(fan forced) 焗25-30分钟即成。用竹签插入面包中間,如拔出時無面団沾着即成,如未熟可以再焗5分钟再試直至熟為止。
Put into a preheated 180c oven to bake for 25-30 minutes. Use a bamboo skewer to pierced in the middle to see if the bread cook through, if the skewer comes out clean them it's cook.  If not, give it another 5 minutes and test it again until it's done.
