材料:
1. 將蛋白放進攪拌盤內,用打蛋器或電動攪拌器打發。
2. 將1/3 砂糖加入蛋白混合。
3. 將剩餘的砂糖分兩次加入蛋白內混合。
4. 等蛋白和砂糖混合好後,就隔熱水加熱一邊打發,一直打發至可以拉出立體狀。
5. 停止隔水加熱,繼續打發至完全冷郤,及蛋白霜挺立。

4. Continue to beat in bain marie until soft peak.
5. Remove from bain marie and continue to beat until firm peak.
